Healthy Breakfast bacon egg muffins



Breakfast egg for busy weekday mornings

Ingredients :
  •     6 Slices Deli Ham (lean)
  •     6 Large eggs
  •     1/2 Cup Shredded Cheese (we prefer Colby Jack)
  •     1 Tbsp Chives (chopped)
  •     Pepper (to taste)
Directions :
  1. Preheat oven to 350 degrees
  2. Grab a muffin pan and spray 6 of the muffin cups.
  3. Use ham slices and press them into the muffin cups. The edges of the ham will stick up higher than the edge of the cups.
  4. Place in the oven and bake for 10 minutes.
  5. After 10 minutes take the muffin pan out of the oven and crack and egg into each ham cup. Gently break the yolk and then crack pepper on top to taste.
  6. Return the muffin pan to the oven and bake for 10 to 13 minutes depending on how you like your egg cooked. I do 10 minutes because I like my a little runny.
  7. Remove from oven and sprinkle the cheese and chives on top. Serve right away!
